Happy Monday party people! I hope you all had as much of a wonderful, rejuvenating weekend as I did. Well not really, I was busy as hell this weekend, but a weekends a weekend in my book and I love them all equally.
Does anyone else have the worst time getting back into the swing of things on a Monday? I do. My biggest problem is getting myself out of the door prepared for the day ahead, and packing my lunchbox is the most difficult part.
I used to spend hours, and I mean HOURS, on Sundays food prepping for the week. Now don't get me wrong, I think it is totally important to have healthy options prepared and ready so that you don't default to quick, unhealthy options. I seriously respect people who's meal prep game is on point because it truly is hard. But I had to stop. I quickly realized that my entire Sunday was spent in the kitchen. Not relaxing and enjoying my day of rest whatsoever. And most of the time I was making things I didn't even enjoy eating and had to choke down for the next five days, just because they kept well in Tupperware. So I had to scale back on the prep a little bit and simplify.
The biggest change I made is simply making extra dinner at night to take for lunch the next day. And just like that, I eliminated the need to prepare separate lunches for the week. But the problem of Monday's still remains. Since I have dinner with my family just about every Sunday, I never have leftovers to take with me for lunch. So I started buying Tastefully Plated paleo frozen meals on my Sunday grocery store trips so that I would have something healthy for lunch that takes zero prep time. And they're awesome! Really tasty, low sodium, balanced macros. Perfect go-to meal AND lunch problem, solved.
But sometimes I forget to take a trip down the frozen foods section on Sundays and I'm left with the lunch dilemma once again. Like today. So I came up with this DELICIOUS shake recipe using About Time protein powder. I heard about these powders a while back from a girl at my gym and decided to try them out instead of the protein I was using before. And let me tell you, they are seriously great. All of the flavors have like five ingredients, nothing artificial, no nasty aftertaste and they mix great with everything. If you are looking for a clean, simple protein powder, I highly recommend this brand.
So here's what I threw together today. This totally tastes like a milkshake and so far has kept me full from lunch time until now (3pm) which is more than I can say for my normal lunches sometimes!
1 Scoop About Time birthday cake protein powder
1 cup unsweetened vanilla almond milk
1/2 cup crushed ice
1 tsp vanilla extract
1 dash ground cinnamon
*Optional* 1 tbsp peanut butter
Blend everything together and enjoy!
